EASTER BUN

It is a Beautiful Thing - thanks to all who were interested in this delicious Caribbean treat.

Here's a recipe for those who are culinarily gifted:

(Compliments of COOKING CARIBBEAN STYLE)

Jamaican Easter bun

Ingredients:

1 1/2 ozs margarine
3/4 cup brown sugar
2 Tbs honey
1/2 cup stout
1 1/2 cups flour
1 1/2 tspn baking powder
1 egg
4 Tbs raisins
4 Tbs Currants
1 Tbs mixed peel
2 Tspns mixed spices

Method:

Melt margarine,sugar, honey & stout on a Low flame, stirring.
Sift flour and baking powder and spices
Add beaten egg, fruit and cooled melted mixture.
Mix well.
Pour into a greased and lined 1lb tin and bake at 350 for approx. 45 minutes or until done.

I totally have to try this. Anything I can cook with beer makes me happy. My steak pie with stout is the best thing ever.

Mixed spices?
Like cinnamon, nutmeg,ground cloves and mace?
Or something like Allspice or pumpkin pie spice?

december - yes, cooking with drinks is great. I have a Guinness cookbook somewhere...

bernita - I think it's a nice combo of what you like. Mine tastes like cinnamon, nutmeg, cloves, Allspice, pumpkin pie spice and ginger. Maybe heavy on the ginger...
